"I started baking because I got tired of what passes for bread in most stores. It’s engineered for shelf life, not for eating. Long ingredient lists, additives to speed things up, and a product that’s made to sit on a shelf for days instead of being enjoyed fresh.
That never sat right with me. Bread shouldn’t need all of that. So I started making my own. Simple ingredients, slow fermentation, and no shortcuts. Just bread that’s made to be eaten, not stored."
